Lamb meat is not as popular as it likely should be among meat lovers. Organic, grass-fed lamb meat boasts heart-healthy omega-3 fats, a hefty amount of protein and potassium to boot. Lamb is a deliciously tender meat, falling somewhere in between a ribeye steak and a salmon steak in terms of tenderness, and the flavor of lamb meat is hard to beat.
Here are ten recipes you can try with a few ounces of organic, grass-fed heart-healthy lamb.
Lamb Chops with Rosemary and Garlic
The tender, succulent flavor of lamb chops goes perfectly with fresh rosemary. Try this recipe one night for dinner.
-4 lamb loin chops
-3 cloves of fresh-pressed garlic
-6 Tablespoons of freshly squeezed lemon juice
-3 Tablespoons of freshly chopped rosemary
-salt and pepper to taste
Mix the spices and lemon juice together, and press it into the lamb chops. Set aside. Preheat the oven on the broiler setting. Place the lamb chops in a broiler-safe pan and cook for 7 to 10 minutes or until fully cooked. Let set for 5 minutes before serving.
Lamb Fajitas

-2 green peppers, sliced
-1 red or yellow onion, sliced
-2 large tomatoes, quartered
-Whole wheat or veggie tortillas
-Spice to taste using cumin, salt, pepper, garlic powder and Chipotle chili powder

Add green pepper and onion and cook for 3-5 minutes, stirring regularly. Add tomato and cook for one more minute. Add spices, mix thoroughly and serve.
Lamb Roast
Lamb roast is as easy to cook as a beef pot roast – and twice as tender.
Directions:
Simply preheat the oven to 325 degrees. Rub the lamb roast with olive oil, salt and pepper. Top with fresh, peeled garlic cloves and fresh rosemary sprigs. Place the roast in a roasting pan, add about an inch of water to the bottom and cook for 3 to 4 hours or until tender.
Grilled Lamb Chops with Plum Sauce
Start cooking your lamb chops on the grill over medium heat. As they cook, combine 3 fresh, pitted plums, ½ cup grape juice, 1 tablespoon of honey and 2 tablespoons of fresh chopped rosemary in a pan. Bring the sauce to a boil, reduce to a simmer and let simmer for 8 minutes. Add 1 tablespoon of corn starch and 2 tablespoons of water and mix, stirring on medium heat until it thickens. Take off heat and serve with grilled lamb chops.
Lamb Chops with Balsamic Reduction
Using Rosemary, Basil, Thyme, Salt and Pepper as a rub, grill, broil or bake your lamb chops and serve them with a Balsamic vinegar reduction.
Sear-Roasted Lamb Loin Chops
-4 ¼ inch thick lamb chops
-salt and pepper to taste

Then transfer to the oven and cook until a meat thermometer reads 130 degrees. Remove from oven, cover with foil and let the chops rest for 5 minutes before serving.

This Site Was Inspired By An Interest in Protecting the Environment
We had the privilege and joy of learning from Dr. Charlie Stine who instilled a love for the natural world through incredible field trips with the Johns Hopkins Odyssey Certificate program in Environmental Studies. At the time, the program was endorsed by the Maryland Department of Natural Resources. Sadly, after Dr. Stine retired, the program was phased out. We hope that we honor his legacy by shining a bright light on environmental issues and sharing good news about the success of various conservation programs when possible.
